Lou's Banana Crunch Muffins

Batter

1 1/4 c. flour (all-purpose)
1 t. baking soda
1 t. baking powder 
1/2 t. salt 
1/2 c. oatmeal 
1/2 c. chopped walnuts 
1/3 c. butter, melted 
3 bananas 
3/4 c. sugar 
1 lg egg 
Topping 

3/4 c. packed brown sugar 
4 T. flour (all-purpose) 
1/8 t. ground nutmeg 
1/4 t. ground cinnamon 
1/2 c. granola (I use Harvest Crunch, but any granola mixture is nice) 
1/4 c chopped walnuts 
4 T. butter (room temp)

Garnish

1/2 banana, cut into 12 slices (eat the other half!)

Instructions: 

Preheat oven to 375 degrees. Grease a 12-cup muffin tray.
Batter: In a mixing bowl, sift together 1 1/2 cups flour, oatmeal, baking soda, baking powder, and salt.
In a food processor, pulse bananas, sugar, egg, and melted butter.
Fold the banana mixture into the flour mixture and stir well. Let stand for 5-10 minutes.
Topping: in a second bowl, mix together all dry ingredients, then cut in the 4 tablespoons of butter until mixture gets all crumbly.
Spoon batter into prepared muffin tray. Liberally sprinkle topping over muffins.
Top each muffin with a banana slice
Bake for 20 minutes, or until a toothpick inserted into center of a muffin comes out clean.
